mmm… banana muffins


The other day I opened the fridge and was greeted with some bananas. Let’s just call them realllllly ripe bananas. I’m no fool, I know these are perfect for baking. Then it came over me. This craving for banana bread that could not be ignored, despite the fact I only had an hour to get ready for work. The problem with banana bread is that it can take like 45 minutes to bake… time I did not have. I did have time to whip up some muffins though, and they were awesome. They tasted like fall even though the temps outside say otherwise. I paired them with this pumpkin spice coffee recipe, only iced.

Makes 12 muffins:

4 reallllllllly ripe bananas

1/2 cup sugar

1 beaten egg

1/3 cup melted butter

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups flour

1 teaspoon cinnamon

Mash the bananas and mix with sugar and butter. Add the egg. In a separate bowl, combine all the dry ingredients. Slowly add the flour mixture to the banana mixture and combine. Pour into a muffin tin and sprinkle with some brown sugar and oats. Bake at 350* for about 20 minutes.
