One of my favorite meals lately is sweet potato and goat cheese quesadillas with sauteed veggies. This is adapted from the Planet Green website, which I love because they have a lot of quick but healthy meal ideas. The most time consuming part is the sweet potato puree but you can make a bunch and use it for leftovers, or these yummy pancakes! I peeled and diced two sweet potatoes and boiled them until soft. After they cool, puree them in a blender or food processor.
Next up (or while your potatoes are cooling), sautee whatever veggies you want in garlic, salt, and pepper. I used approximately 1/2 red bell pepper, 1/2 bag frozen spinach, and 1/2 cup of frozen corn.
Put all your goodies on a tortilla and pan fry until brown on both sides. Keeping your burner temperature to medium will cook the quesadilla slower, allowing the fillings to warm up without the tortilla burning.
Slice it with a pizza cutter and top with your favorite salsa!
