eat your veggies!

I recently joined a CSA and Wednesday was my first week of veggie delivery. I love vegetables and I’m really excited to have a curated box of local, organic produce each week. This edition was loaded up on greens- spinach, kale, and spring mix. We also got red and golden beets, and watermelon radishes- both with the greens as well.

I love radishes but I’d never had watermelon radishes before- they were a little spicy and so pretty with their striped, pink centers. I’m looking forward to trying some new veggies and the new recipes that come with each delivery!

We tried a CSA for the first time this year and loved it. Ours ran from the middle of May to just last week. Funny how they schedule them in different parts of the country. We loved our experience, and though the investment up front seemed like a lot, the amount of food we got each week more than made up for it. I literally haven’t had to buy veggies since May!

i love CSA boxes and miss ours so much but they were sending us soo much food that we couldnt keep up with it and felt really bad when food went bad. but i do miss the food we would get. i loved the watermelon radish, so good and so so pretty. i hope you enjoy it and would love it if you posted your yummy recipes.

Yum!! That salad looks SO good. We’ve never done the CSA thing, mostly b/c we have our own garden, but I do really like the idea of being “forced” to try new things this way.

You’ll have to keep us posted on this!

Have not. Cayla would love it, but sadly, I am like a 3 year old when it comes to veggies – they have to be cut very small so I don’t notice them or covered in curry. hah! These photos are beautiful, L! :) I can’t wait to see some of your recipes; I am sure with all these fresh veggies ya’ll are going to get super creative this winter! xo

  5. This makes me want to be a part of a CSA program SO badly! I just was always worried about the amount of veggies I could eat all on my own! This is such a beautiful first bunch, those watermelon radishes are gorgeous! Perhaps when the weather is warmer again here I will give it a try, definitely something I fully support!

We have never been a part of a CSA, but I’ve heard so many positive things about them that I wish we were! Those watermelon radishes look beyond yummy! I really need to consider looking into this :)

  9. Someone in my area just started something like this and I think it is a great idea, I just know that a lot of them would sit around in my fridge and go bad because I’m SO busy and don’t have time to cook :P
I do love fresh produce though, looks like you’re gettin’ your vitamins ;)
